Roselli Chef’s Knife (21cm)
full tang /single or double scandi bevel / curly birch handle
When asked why he designed the knife this way Heimo replied that his wife “Astrid” asked for it to be this way. A French shaped cutting edge with an atypical blade depth offers an offset handle usually found only in much longer larger and heavier blades. All great blades are an evolution of use and this one comes from a family who knows how to grow and hunt their food. Blending Simplicity and practicality are delivered through the durability of Roselli’s UHC/Wootz carbon steel and when they are finished they can be returned to their free standing block of birch.
With the combination of blade shape and Roselli steel I felt there might be other possibilities for this knife. I spoke with Heimo and as a result we can now offer the blade in single or double bevel scandi edges and with both curly birch or silicon/g10 handles (with double brass rivets). These options provide a huge range of possibilities for both regular and heavy blade uses of time and materials. Each variation is presented with heat treated curly birch handle coated with linseed oil in its own free standing wooden block of birch.
