During one of my visits to Heimo I asked if he would take a look at a standard butcher’s saber and if he would consider making it from his Roselli UHC/ Wootz carbon steel. Its first version came with a curly birch handle and it proved its value from all butchery demands, finishing and presentation before and after cooking or smoking. Again taking a common blade shape well known and in a sense turbo charging its abilities this unique knife outperforms all other slicers and sabers in the marketplace. To be sure it is not a prosciutto or gravlax blade, it does ot pretend to be.
