The most influential and versatile mid sized generalist blade made for western food preparation
Sandvik STAINLESS STEEL /184gms +/- 8gms
The 8” Stainless steel Chef’s knife has emerged as the perfect generalist chef’s knife for preparation of meals for 2 to 6 people. This award winning handmade knife is the finest foundational knife for any collection; at home or on the line.
With extended edge contact for over half the blade’s length before rising up to its point it creates the perfect cutting profile. This elegance offers absolute forward motion control for all: slicing, dicing, mincing, chopping or julienne movements no matter vegetable or protein, soft or dense.
Designed by Philippe Sabatier at the beginning of the 19th century it is unchanged in its shape having helped to deliver French cuisine now for 200 years. While the design has been copied by the cutlery production centers of Sheffield and Solingen, it is also the template for the mid-sized Japanese Gyuto. This high yield drop forged knife’s pedigree is unmatched.
Award winning and handmade this powerful stainless steel blade is 57/58 HRC and with proper honing in-between sharpening (of 20 degrees) this blade offers you years of service on your culinary journey. Each blade is presented with its own handmade French Leather Scabbard. With a sharpening angle of 20 degrees it removes half the amount of steel removed when sharpening at 15 degrees common to the Japanese knife interpretation.
