This 5” boning knife is the finest example of the hammer forged culinary tool in the French style. To clarify, traditional French boning knive’s blades are made short, strong and very stiff. This blade provides service to all aspects of butchering of carcase breakdown and final cuts. The reverse sharp curve at the bolster is original to the French boning knife and its value evolves as your technique does. However, the foundational ability of this knife is its strength and maneuverability. A valuable tool for finishing and final preparation for your grill, oven or BBQ at home or on the line.
This award winning, handmade, powerful stainless steel blade is 57/58 HRC and with proper honing in-between sharpening (of 20 degrees) this blade can offer you years of controlled value in your culinary journey. Each blade is presented with its own handmade French Leather Scabbard. With a sharpening angle of 20 degrees it removes half the amount of steel removed when sharpening at 15 degrees common to the Japanese knife.
