To clarify, traditional French boning knives are made short, strong and very stiff. The blade serves all aspects of butchering carcass breakdown and final finishing of all cuts.
A Boning knife is always a straight edge; the blade is never curved. Knives with 6 to 8-inch curved blades are skinning knives (not boning knives). While useful in commercial sales, consumers do not think their homes need skinning knives; all hunters already have them.

Powerful Stainless Steel Blade: The blade is crafted from Z50C13 stainless steel with a hardness rating of 57/58 HRC as a result of cryogenic tempering (-70° -80° air cooled), which creates an increased edge retention while remaining flexible. Resulting in an extra fine double bevel profile which is finished by a crosswise manual polishing.
Long-Lasting Edge: The 20-degree sharpening angle removes only half the amount of steel compared to the 15-degree angle common to Japanese knives, prolonging the boning knife’s lifespan.
