Award-Winning Craftsmanship: The K Sabatier 1834 Authentique collection won the IWA International Knife Award in the Gourmet Knives category in 2009 in Nuremberg, Germany.
Powerful Stainless Steel Blade: The blade is crafted from Z50C13 stainless steel with a hardness rating of 57/58 HRC as a result of cryogenic tempering (-70° -80° air cooled), which creates increased edge retention while remaining flexible. Resulting in an extra fine double bevel profile, which is finished by a crosswise manual polishing.
Long-Lasting Edge: The 20-degree sharpening angle removes only half the amount of steel compared to the 15-degree angle common to Japanese knives, prolonging the 10″ slicing knife’s lifespan.
Handmade French Leather Scabbard: Each blade comes with its own handmade French Leather sheath, protecting the blade from damage while adding an element of premium craftsmanship.
