The most influential and versatile large sized generalist blade made for western food preparation
Sandvik STAINLESS STEEL / 256gms +/- 8gms
Possibly the first of the knives Philippe Sabatier offered to his customers. The 10″ Chef’s knife has been the tool used in more French restaurants and homes devoted to this cuisine down through the centuries than any other knife ever made.
While its size can be intimidating to some this knife has been tempered by arguably Western cultures most complex cuisine. Its purpose is to provide the ability to process larger amounts of raw materials when needed. Its blade shape is different from its smaller 8” brother. Much deeper and with a greater length this knife expresses smooth and graceful movements that power through the materials you are preparing with ease and complete blade control. No matter soft, dense or hard, great in the home or for its original professional position on the line.
Award winning and handmade this powerful stainless steel blade is 57/58 HRC and with proper honing in-between sharpening (of 20 degrees) this blade offers you years of service on your culinary journey. Each blade is presented with its own handmade French Leather Scabbard. With a sharpening angle of 20 degrees it removes half the amount of steel removed when sharpening at 15 degrees common to the Japanese knife.
